- Olive oil to cook
- Salt and pepper to season
This Chilli Con Carne is the perfect dish for any family meal. Filled with flavour & goodness, it’s ideal for the slow cooker making it super easy too!
- Turn your slow cooker on to HIGH to heat it up. Once you add the ingredients, you can turn it back to LOW to cook.
- Saute the garlic and onion in oil on a hot pan for a couple of minutes. Then add the minced beef to brown. While the meat is browning, add the marjarom, paprika, cumin, chilli flakes and brown sugar then stir to combine.
- When the meat is nicely browned, transfer it to the slow cooker and stir in the remaining ingredients (beef stock, chopped tomatoes and kidney beans). Season well with salt and pepper then turn the heat back to LOW and cook for at least 3 hours.
Hint:
To reduce the sauce when you’re finished cooking, remove the lid of the slow cooker about 20 minutes before you intend to serve. Alternatively you can transfer the dish to the hob to speed up the process. Make sure that your slow cooker pot is suitable for the hob before doing this.
This dish can also be easily cooked on the hob. You can follow the same steps however you will only need to cook the Chilli con Carne for about 1 hour.
Serve with generous dollops of creme fraiche and guacamole, a wedge of lime, a sprig of coriander and a large spoon of fluffy boiled rice.
